A luau staple, that I get crazy cravings for! This was my first time making Chicken Long Rice, and it was beyond easy & quick with the store-bought rotisserie chicken shortcut! I forgot to buy green onion, but it was still delicious without it! Perfect for a chilly Hawaiian night!
**Note – Use less noodles or more broth if you prefer a soupier long rice!
Chicken Long Rice
Yield: 2 Servings
Prep Time: 5-10 minutes
Cook Time: 10 minutes
6 Slices Ginger (1/4″ thick piece, smashed)
2 Cloves Garlic (peeled, smashed) or 2 tsp of chopped garlic
6 cups Chicken Broth (or 3 Chicken Bouillon cubes and 6 cups water)
1 rotisserie Chicken, shredded
Hawaiian salt, to taste
6 oz bean thread (cellophane) noodles
6 stalks Green Onion, cut into 1/2″ slices
Combine ginger, garlic with stock in a heavy saucepan. Bring to a boil.
Add shredded chicken and salt to stock mixture. Simmer, uncovered, until mixed.
Stir noodles into broth and simmer, uncovered, until noodles are translucent, about 6 minutes.
Stir in green onions. Adjust seasoning to taste with shoyu and chili pepper water.
